Question:
Am I really wishing too hard here? I'd like to have a low carb recipe
for any type of muffin, bran muffins would be my personal choice as I
need the fibre. Is it possible to make a muffin that is ok for us
diabetics to eat?

Here's one I use.
3/4 cup vital wheat gluten
1/2 cup flax seed, ground
1/4 cup wheat germ, toasted
3 teaspoons baking powder
1 teaspoon salt
1/4 cup Splenda
1/4 cup whipping cream
3/4 cup water
1 egg
4 tablespoons butter, melted
1. Whisk dry ingredients together. Whisk wet ingredients together. Pour
wet ingredients into dry ingredients and whisk together.
2. Spoon batter into greased muffin tin. I don't use cupcake liners as
these muffins stick to them but come out of the greased muffin tins fairly
easily.
3. Bake in pre-heated 400 degree oven for 20 minutes.
4. Remove from muffin tin.
I use muffin top pans and get 6 muffins with 9 grams of carb each but 4 are
fiber so the net effective carb count is 5 per muffin.
I vary these by using different extracts such as vanilla, maple, lemon, etc and
adding nuts or poppyseeds.
