Question:
What is a good diabetic breakfast for you? Lunch, you enjoy? That you
know will not raise your BG.
Answer:
For breakfast, I usually have eggs in some form and a 1/2 slice of toast
(the bread I use has large slices, 22 grams of carbs, 3 grams of fiber
per slice, so I get half that for carbs). Sometimes Spam Lite or
Iserno's chicken breakfast sausage (low fat). Also a bowl of oatmeal
with a half slice of toast. If I'm running late, I'll swing by
McDonald's and grab a breakfast meal and eat on the way to work. A
little higher in carbs, but the fats should slow the absorption down.
My bg's never very high before lunch.
For lunch - choices include salad with some meat and/or egg, taco salad
(you don't need to eat the shell) or tostado, hamburger (no fries),
Depending on how busy I get at work, I *may* have a mid-morning snack of
fruit, nuts or crackers. I also like the Diet Swiss Miss (4 grams of
Carbs) mixed with coffee instead of water!
Of course, if you're low-carbing, my diet is too many carbs for you. I
have about 130-135 grams of carbs per day, no more than 45 per meal.
